Kombu (algae, Laminaria japonica)

Kombu (algae, Laminaria japonica), also known as kelp, is a dark brown to dark green brown algae. It forms thick forests on the seabed and grows worldwide in clear and cold waters. It has a wide variety of uses, particularly in Asian cuisine. Compared to almost all other foods Kombu has – and even compared to other edible algae – a significantly higher iodine content.
